Diddle with care and you will go far. That is how this cous cous dish went from a mundane readymade staple to an incendiary side that will diddle your date’s taste buds. Hear that? That is the sound of your date’s reluctance to bang you fizzling right out the window. You may now diddle freely.
Ingredients (Serves 2):
1. 1 cup whole-wheat cous cous
2. 1 orange
3. 1 dash sea salt
4. 1 pinch saffron strands
5. 1 handful crushed roasted almonds
6. 1/2 onion chopped finely
7. 1 tbsp butter (skip to make vegan)
8. 5 dates
First prepare the fruit: cut the orange in half, squeeze the juice into a measuring cup, and then cut the peel in long thin strips. Remove the pits from the dates and chop finely.
Fill up measuring cup with water to 1 1/4 cup and pour it into a pot on medium heat. Add the butter saffron, sea salt, orange peels, onion, almonds, dates and cook until it reaches a roaring boil. Pour in the cous cous, stir thoroughly, turn off the heat, and cover for 5 minutes. Remove the top and fluff the cous cous before serving
This cous cous dish is impressive enough to stand alone, but many meat-heavy ENTRÉES will be well served in unison, much like you and your date.
