Did you hear that crack? That’s the sound of my hand against flesh? You know you love it. Denying it is as believable as a crackhead swearing the car stereo in his hand was a birthday gift. So just enjoy the pleasure this gives you like you would a massage with a happy ending. There’s no shame in indulging in life’s simple pleasures. Your date will no doubt agree when you let them taste a little of your thunder. That is, after they catch their breath. So bring the noise and don’t hesitate to smack this dish loud and proud.

Ingredients (serves 2):

1. 2 tablespoons olive oil

2. 1 handful of pistachio meats

3. ½ teaspoon of salt

4. 2 filets of SEA BASS

5. ½ a lemon of juice

6. 1 handful of fresh chopped BASIL

7. 2 green onions chopped coarsely

 

Step 1

Throw the sea bass filets in a bowl and mix in the lemon juice, green onions, basil, salt and 1 tablespoon of olive oil. Let the flavors set in (approx 10 minutes).

Step 2

Pulverize the pistachio meat. Drop the marinated fish over the pistachio so it sticks to the fish like a crust. Warm up the remaining oil in a pan or griddle on medium-high heat. Throw the filets on and pat down the pistachio crust on the topside. Cook the fish through and flip (approx 4 minutes per side), being careful not to lose the cooked crust. Serve it up with some PINEAPPLE RICE.
