Ingredients (serves 2):
1. Seeds from 1 pumpkin
2. 2 tbsp CALIVIRGIN olive oil
3. 2 dashes Cajun seasoning
4. 2 dashes garlic salt
Preheat your oven to 350°F/175°C. Remove as much of the pumpkin gunk as you can and then boil the seeds for approx 10 min. Drain the water and dump the seeds in a baking pan. Add the oil, Cajun seasoning and garlic salt, mix the flavor around, and then spread the seeds out flat. Toss the seeds in the oven and bake until they brown (approx 8 min). Serve in a bowl solo or over SALAD or SOUP.
