Ingredients (serves 2)
1. 1 tbsp OYSTER sauce
2. 1 tbsp soy sauce
3. 1 dash sea salt
4. 1/2 lime
5. 1 eggplant
6. 2 green onions
7. 1 Serrano CHILI
8. 1 small nub GINGER (not pictured)
9. 1 tbsp vegetable oil (not pictured)

Step 1
Prep the eggplant by cutting off the stem and then cutting it into bite-sized pieces. Throw in a bowl, salt, and fill with water, keeping them submerged with a plate (approx 20 min). Drain when ready.

Step 2
Chop up the ginger and chilies finely. Cut away the ends and cut the green onions lengthwise. On medium heat, sautÈ the ginger and chilies in large pan or wok. Throw in the soaked eggplant, add salt, limejuice, oyster sauce, soy sauce, and half the green onion and cook until soft (approx 7 min). Serve on plates and artfully place the remaining green onions.
