This one goes out to all the Big Beautiful Ladies out there.  I’m not too proud to admit that in the course of banging like a champion, I’ve entertained a few BBW with “great personalities”.  So here’s a sexy salad with an amazing personality.  It’s delicious, nutritious, and calorie-vicious. While most salads are meant to help you lose weight, a few rather yummy ones work the opposite way.  The very nature of ranch dressing is an oxymoron: making lean salads fattening.  But the creamy liquid does taste dreamy.  Combine it with tangy BBQ sauce and the calorically-challenged will flock.  This salad is sure to satisfy both of your cravings.

bbq chop chicken salad prepIngredients (serves 4):
1. ½ can BLACK BEANS
2. ½ can corn
3. 1 teaspoon olive oil
4. 1 tbsp ranch dressing
5. 4 tbsp BBQ sauce
6. 2 handfuls tortilla chips
7. ½ lb chicken breast
8. 1 small handful cilantro
9. 4 handfuls romaine chopped
10. 1 tomato chopped coarsely
11. 2 green onions chopped coarsely
12. 1 garlic clove chopped finely
13. 1 handful jack cheese

Step 1
Marinate the chicken breasts up with olive oil, 2 tbsp BBQ sauce and garlic (approx 5 min).  Grill or pan-fry the chicken (approx 8 min) and chop up into small bite-sized pieces.

Step 2
Combine the lettuce, cilantro, green onions, tomatoes, jack cheese, drained corn, drains black bean and chicken.

Step 3
Mix up the remaining BBQ sauce and ranch dressing into a dressing and toss the salad with it.  Serve up and crumble tortilla chips on top of plate.

    I used to get this at the chinese restaurant here in town but they went out of business. I loved it and searched all over to find it again. Now I can make it any time. I included fresh sliced carrots,fresh green bell peppers and water chestnuts with a serving of hot rice.The spice was just right. yum!!THANKYOU
