I hope you’re not too busy because your calendar is about to get busy. Learn to make this dish right and you won’t be lacking in dinner dates for a long time. Meet the enchanting Mexican mole. The chili/chocolate APHRODISIAC double play rides backseat to the powerful array of flavors rocking this dish. The Aztec, Italian, Spanish and Mexican cultures together inspired what became a literal melting pot of delicious cuisine. Chicken will never be the same after you bake it in what is in essence spicy chocolate sauce. Mole has warmed up my winter turning my street cred platinum. I have hotties I barely know inquiring via facebook when I’ll make them say “Holy mole!” Soon. Very soon.

Drinking Buddy: This is Mexican classic. Only the finest Mexicano ceveza will do: Bohemia or Negro Modelo.

1. 1 tablespoon of olive oil
2. 2 tablespoons of peanut butter
3. 1 cup of chicken stock
4. ½ teaspoon of cayenne pepper
5. 1 teaspoon of cumin
6. 1 teaspoon of cinnamon
7. 2 chicken legs (drumstick and thigh)
8. 1 chopped tomato
9. ½ onion chopped coarsely
10. 2 garlic cloves chopped
11. 2 ounces of unsweetened chocolate
12. 1 chipotle pepper dried

Step 1
Heat up the olive oil in a pan on medium heat. Cook the onions until they become translucent (approx 1 minute) then cook the garlic (approx 1 minute). Add the cumin, cayenne and cinnamon and cook them into the onions (approx 2 minutes). Toss the tomatoes in and stew them up with the spiced onions (approx 3 minutes).

Step 2
Chop the dried chipotle and chocolate up finely before adding it to the pan. Follow it up with some peanut butter and mix it all together like a Barn Dance and cook until the chocolate melts (approx 2 minutes).

Step 3
Dump in the chicken stock. Bring it all to a boil on high heat, then simmer on low heat (approx 15 minutes). Puree the contents of sauce (allow it to cool first if you use a blender or food processor).

Step 4
Preheat the oven to 350 degrees F. Heat up a pan on high heat to brown the chicken (approx 3 minutes on each side). Place the browned chicken in a oven safe bowl or small casserole dish. Smother the chicken with your homemade mole sauce (good job, tiger!) and throw it in the oven to bake (approx 45-60 minutes). Serve it to your date over some awesome RICE and await praise.
