If you make this dish, then you da mack! This dish takes the childhood classic and turns it on its head so it’s strutting its sexy stuff across your dinner table. Be ready with a line about how you came up with this recipe remenisce about giving your playground sweetheart a wildflower (I don’t mind you claiming this recipe as your own as long as it gets you laid; if you fails then I will haunt your dreams). Truth be told, I hated mac and cheese as a kid because the flavor and texture was bland as Kansas. Done right, mac and cheese will compliment any continental meal from fried chicken to pork chops and beyond. The bountiful bevy of cheeses and the spicy jalapeño become a techno dance party in your mouth. This boring classic has the much needed flare like that player at the bar getting girls attention with the pink feather boa, but not obnoxious. Remember, you make this side dish right and it will be by your side for many more mouth-water culinary conquests.
Total time: approximately 1 hour 15 minutes
Projected cost: $12, price based mostly on gourmet cheeses
Drinking Buddy: Beer or wine depending on what it’s served with; milk if the kid in you takes control
Ingredients:
1. 2 teaspoons of salt
2. 1 cup of milk
3. 1 tablespoon of flour
4. 2 cups of dry macaroni
5. ½ an onion chopped finely
6. 2 jalapeños: 1 ½ chopped finely, ½ chopped in think rounds
7. 1 cup of Gouda cheese cut into bits
8. 1 cup of shredded mozzarella
9. 1 inch-thick round of goat cheese
10. ¼ stick of butter
11. 2 tablespoons of breadcrumbs (not pictured, sue me)
Step 1
Fill a pot full of water and bring to a boil. Throw in the macaroni and cook al dente (approx 9-11 minutes). While the macaroni cooks, move onto step 2. Pour the cooked macaroni into a colander and run cold water through it to wash out the excess starch.
Step 2
On medium-low heat, melt the butter in a deep large pan. Add the salt and flour and milk them around. Slowly pour in the milk, mixing it in with the flour, butter and salt and cook until the milk thickens. Add the jalapeños and onions and cook them into the now thickened sauce. Finally throw in the cheese and mix it all together thoroughly.
Step 3
Pour the cooked macaroni into the cheese sauce and mix it all together thoroughly.
Step 4
Preheat oven to 350 degrees F. Grease a baking dish. Pour in the mac and cheese into the dish. Place the sliced jalapeños around the top, and then sprinkle the breadcrumbs over the whole dish. Throw the dish in the oven and cook for 35-45 minutes until the breadcrumb crust browns. Serve up with some proper soul food, hot sauce and an ice-cold beer.
