Aloha, hula girls! Kamana wanna laya. That is Hawaiian for, “Come over and I’ll make you dinner.” At least that’s what the tour guide tart said to me on a tropical rainforest walk. Being the unusual tourist with caustic wit is at least good for something. My lack of fanny-pack, Pearl Harbor commemorative t-shirt, and golf hat gave me away. Eager to get away from the family, and, do I really need a reason to jump into the car of an attractive stranger? This lickable local showed me the real Hawaii, including a real Hawaiian bar where my weak sauce knowledge of surfing lingo was mocked. Lucky for my fragile ego, she took me home after for the promised homemade meal. This babe had a badass blade and sliced up sashimi grade ahi tuna her friend caught that morning. Innovation generally is born out of desperation, or so I learned creating this appetizer. I returned home briefly after an extended absence and didn’t even bother to take my luggage out of the car. Off to a birthday party I went, eager to connect with old friends, and make a few new ones. My reputation at the party for being a great cook preceded me. One of the guests was especially keen to find out just how much I know about food. We spent most of the night discussing food, our bodies inching closer and closer as we spoke with passion and lust for fine cuisine. I’m not sure exactly how it went down, but we bailed on the party before the cake was served (the food was uninspiring anyway) to whip something up at my house. Only problem was my fridge was empty except for some frozen potstickers, condiments galore and the three strawberries my roommate had leftover. With my cooking game’s reputation on the line, I threw down the gauntlet and made this random piece of awesomeness. I’m not sure what it is about bok choy; I always seem to taste sweet satisfaction when I serve it to the ladies. Perhaps it’s a purely coincidental, somewhat random constant in my life. But I’m not so sure. It could be that it’s classy and reeks of sophistication. The girls I serve it to may sense that I am indeed a well-traveled man of the world. No doubt I was probably an envoy or junior UN ambassador traveling in my own motorcade complete with a bodyguard with an Austrian accent. But my gut tells me it’s a more physiological. Whether it’s the healthy chloroform, delicious taste, or the lovely green color, something magical is happening each time I grab a bok choy off the shelf. Maybe it’s best not to understand one of nature’s best-kept secrets (until now, you’re welcome!). It’s just as well so long as you enjoy the benefits of steamed magic.

Drinking Buddy: Beer or champagne
Ingredients (Serves 2):
1. 1 tbsp sesame seeds
2. 1 tbsp HONEY
3. 1 bunch bok choy
Chop off the base of the boy choy stalk to separate the leaves. Steam until the leaves begin to wilt and turn bright green.
Lay the steamed bok choy leaves out wide and separate from each other. Drizzle the honey evenly over the boy choy and then scatter the sesame seeds so they stick to the honey.
Serve this fine veggie side with any number of fish or meat ENTRÉES.
